The pig offal rolls are unique to Jiangzhou. Starting in the middle of the Qing Dynasty, it has a history of more than 200 years. Those produced by the time-honored "Liang Chengtai" in Xizhuang Village, Beizhang Town are especially famous. Pig offal rolls are made of selected fresh liver, heart, lungs and intestines. After repeated washing and soaking, they are carefully wrapped with long pig intestines to form a cylindrical meatloaf, which is sterilized by high temperature and cooked in gravy. It can be served as a sliced or diced cold dish, or a soup stewed with tofu and spinach (called "rolled tofu"), producing perfect color matching and yummy taste. In addition to various natural spices, the gravy is also equipped with several Chinese herbal medicines, which greatly improve the nutritional value and nourishing effect of pork rolls.
