[Yongji] Zhangying Millet Vinegar

The brewing technology of Zhangying millet vinegar has a history of more than one thousand years. It reached its peak in the late Ming and early Qing Dynasties. The local people explore and create a unique traditional craft from the production of life. Zhangying millet vinegar is made from millet unique to the Loess Plateau with barley malt as saccharifying agent, Daqu (yeast for making hard liquor) as leavening agent, and then fermented with black porcelain jar for 300 days.
